The audit is late.
That is the honest status. Thirty cafes named, zero scorecards filed, Albatross queued first — not because of hype, because the research stack is tallest there and tallest stacks deserve the first falsification test.
This page updates when a visit happens, not when marketing asks.
Albatross first — anonymous, cash or card, no introduction. Then Nitan, Sunset, Backstreet in week two. Return visits start week three. The first five scorecards publish week four and the pre-audit banners come off those pages. Everything else waits in line. Printable field checklist: _research/visit-checklist.md in the repo (not deployed). Rank changes log at /corrections.
00The contract.
Issue 01 made a promise in public: we would not rank on vibes, on Instagram, on who sent the nicest DM. We would rank on cups, visited twice, paid for in full, scored blind to the cafe's knowledge. That promise is not marketing copy — it is the only reason this site exists.
Until a scorecard is filed, every number on The 30 is provisional. Research candidates (#17–30) are not recommendations; they are leads with doubt attached. Published previews (#01–16) are serious cross-source bets, still ungraded under our rubric. If the audit finds a top contender coasting on reputation, it drops. If a research candidate pulls a serious cup on visit one, it moves up the queue.
We will publish the failures as plainly as the wins. A cafe that comps a drink gets cash on the counter and a note in the file. A cafe that only performs for identifiable reviewers gets caught on the second visit. Read /standards if you want the rubric before we use it on your favourite room.
01Site status
01bAudit queue — field work starts here
Desk research on all thirty English profiles is closed (v2.23). The only work that changes ranks is below — two paid anonymous visits per cafe, scored to 48 points. Visit briefs live in _research/briefs/ (repo); every EN cafe page carries the editorial + brief appendix synced at build.
- #01 Albatross Coffee Roasters — The most-cited specialty coffee shop in Pattaya — owner-roasted, 15+ single origins, opposite Pattaya Beach.
- #02 Nitan Coffee's Tale — Full on-site roastery with tasting room. The most ambitious specialty production in the Pattaya metro.
- #03 Sunset Coffee Roasters — Roasting factory format with Speed Bar (espresso) and Slow Bar (manual brews). Sea-view positioning is the editorial hoo…
- #04 Backstreet House — Two-bar specialty cafe with koi-pond garden and day-to-evening pivot — coffee, then food truck, then craft cocktails.
- #05 SheeVa Café — Hand-brewed Ethiopian single origin. Hidden gem with pastry and oyster program. Cross-source buzz — not our score until …
First visit target: Albatross Coffee Roasters — opposite Pattaya Beach, owner-roasted, tallest research stack. Order pour-over single origin + one milk drink. No introduction as press. Pay menu price both times.
After both visits: npm run scorecard albatross-coffee-roasters <craft> <consistency> <value> <return> then npm run sync-data and npm run build. Log rank moves on /corrections only if the scorecard forces it.
Issue 01 is published as a pre-audit research preview — thirty files, zero final scores. The directory, the method, and the doubt are live. The scorecards are not. We published the framework before the visits on purpose: so cafe owners can argue with the rubric before we argue with their cups, and so readers can see that today's ranks are evidence, not verdict.
If a Pattaya cafe owner reads this and disagrees with how we'll score, the door is open. Email info@pattaya-coffee.com before we walk in, not after.
02Issue 02 (when audits land)
Issue 02 is not a marketing season — it is the first time this site publishes final ranks. Triggers: scorecards filed for the full published tier (16), original photography on audited pages, /corrections live with every rank move explained, and the homepage manifesto updated from “zero verdicts” to an audited count readers can verify on /now.
- Lock the Pattaya Coffee 30 order from filed scorecards only — no vibes, no comps.
- Retire pre-audit banners on audited cafe pages; research tier (#17–30) stays flagged until its own visits.
- Second editor on anonymous visits (Issue 01 is single-editor by disclosure).
- Network mesh live (May 2026): all 14 TimPaemi properties cross-link, including Pattaya Authority case study and Pattaya Villa Stream.

Albatross Coffee Roasters — Visit 1
Editor walks in anonymous, orders signature drink plus a milk drink for comparison, pays cash. No interview. No introductions. Score sheet filled at a different cafe, two hours later, while memory is fresh.
Nitan, Sunset, Backstreet — Visit 1 each
Three first visits — Nitan (Banglamung / Na Jomtien), Sunset and Backstreet (Central Pattaya). Different days, different times of day. Notes filed separately and reconciled at end of week.
Return visits begin
Second visit to Albatross. Different barista, different time of day. The whole point of twice-minimum: did the first cup happen because we got the dialled-in shift?
First five scorecards file
Pre-audit banner removed from the first five cafe pages. Scores published with full-resolution editor photography. Pattaya Coffee 30 ranking updated for the first audited tier.
Newsletter opens
Privacy-first signup, single monthly issue, no third-party trackers. Issue 01 wrap when all 16 pre-audit scorecards are filed (30-cafe shortlist complete; audits in progress).
Issue 02 planning
Research longlist is closed at thirty cafes. Issue 02 planning opens once the first audit wave files. Suggestions welcome — email or via /feedback.
04What we're not doing
We are not running paid ads, sponsored placements, or affiliate links. We are not running Google Analytics or third-party trackers — see /privacy for the full data posture. We are not building an app — the site is the product. We are not on Instagram yet; original photography is scheduled before any social presence launches.
If a section of the site feels thin, it's because we'd rather ship one page that's right than ten pages that are filler.
05Open questions
A few things we haven't decided on, and would value reader input on:
- Newsletter cadence. Monthly issue-recap or weekly short notes from the audit floor?
- Bean-source taxonomy. Do readers care about importer (e.g. roaster X via importer Y) or only about origin country?
- Corrections log format. One page per issue vs inline notes on each cafe file when ranks change?
If you have a take, the editors read every email at info@pattaya-coffee.com.
